What better way to start Mothers Day than to bring that special woman in your life breakfast in bed. And to get your creativity running on what you should make, I have a great omelet recipe that lets you pick her favorite things to put in her omelet to make this a day to remember.

Custom-Made Omelets

1/2 tbsp. butter
2 eggs
1 tbsp. water
salt and pepper to taste

Filling Options:
    grated cheese, such as cheddar or mozzarella
    crispy bacon pieces
    sliced mushrooms
    diced green or red peppers
    cottage cheese
    flavored cream cheese

In a large, non-stick frying pan, melt butter over medium-high heat. Meanwhile, in a small bowl, beat eggs with a fork. Stir in water. Pour the egg mixture over the butter, swirling the pan gently to cover the surface evenly. Sprinkle the desired filling over half of the omelet and cook 30 seconds or so. Flip the opposite side over and form a semicircle. Cook until the eggs solidify. Serve.
