Mom's Wit
By Janet Brown Let me share a recipe given to me last year by one of my readers. I am enjoying this month lazily
preparing for the summer days ahead.
Hawaiian Fruit Salad
10 oz. miniature marshmallows
8 oz. coconut
10 oz. maraschino cherries
32 oz. cottage cheese
16 oz. sliced peaches
16 oz. fruit cocktail
20 oz. pineapple chunks
16 oz. mandarin oranges
10 oz. whipped topping
Drain fruit. Put all ingredients together in a large bowl. Mix well and cover. Refrigerate until serving time.
I made a couple of changes: I cut the marachino cherries in half and didn't use as many. I used the small curd cottage. This is a good summer fruit recipe. Enjoy it at a family picnic or a barbeque.
